INGREDIENTS 1 cup FGHFG whole wheat berries ½ teaspoon salt 3 cups water ½ cup fresh strawberries 1 tablespoon balsamic vinegar 2 tablespoons chèvre goat cheese 4 large fresh basil leaves olive oil, salt, and pepper to taste
Rinse wheat berries well in a colander, removing any hulls. Place in saucepan with ½ teaspoon salt and water. Bring to a boil, reduce heat, cover, and simmer for 60 to 75 minutes or until tender. Drain and chill in the refrigerator.
Once the wheat berries are chilled, stir in balsamic vinegar, salt, and pepper. Slice strawberries and place on top of wheat berries. Sprinkle goat cheese over the top.
Cut basil into strips. Garnish the top of the salad with the basil. Season with balsamic vinegar, olive oil, salt, and pepper to taste.
